A blast chiller does the one job a storage cabinet cannot: take cooked food down through the temperature range quickly, so it can be held, portioned and reheated instead of thrown out. Refurbished blast chillers and blast freezers are mostly one-off machines. They come off showroom floors, out of demonstration kitchens and off supplier clearance lines, and each one is inspected, tested and verified in working condition before it is relisted for sale. Marks from transit or from the kitchen the unit worked in are described on its own product page. Delivered anywhere in Australia.
A blast chiller chills hard and fast, then hands the product to a refurbished upright freezer or a refurbished upright fridge for storage, so buying the pair together means one order to track and one number to call if something goes wrong. The new commercial blast chillers range shows the same machines brand new, and where the production run is large the Irinox blast chillers there are worth comparing against what is here.
Fund the machine through Silverchef Rent-Try-Buy rather than paying for it outright, with the option to upgrade or hand equipment back as things change. Related refurbished ranges: refurbished commercial freezers and refurbished commercial kitchen equipment.
It moves air hard and cold across hot food so the product passes quickly through the temperature range where bacteria multiply fastest. A storage fridge is built to hold product that is already cold; put a hot tray of cooked food in one and it will raise the temperature of everything else in the cabinet while it slowly loses the argument.
That is a food-safety job first and a quality job second. Fast chilling also holds texture and moisture better than slow cooling does, which is why cook-chill kitchens, caterers and bakeries end up with one even where the volumes are modest.
They are often the same cabinet with two modes, and the product page for a unit states which modes it has. Chilling takes cooked food down to a holding temperature for use within days. Freezing takes it further so it can be stored for much longer. If you are producing to freeze, you need the freezing mode; if you are producing to use in a few days, chilling is enough.
Running a chill-only machine and a refurbished chest freezer is a common and cheaper combination, but it is slower and the freezer takes the strain. Ask us what a specific refurbished unit is capable of rather than assuming, because this is one spec where the model name tells you very little.
The fan and its motor first, because a blast chiller is mostly an air mover and a machine that cannot move air cannot chill fast. Then the evaporator, the door seal and the hinges, and the condition of the probe socket if the unit uses a core probe.
Then the controller. Blast chillers have more electronics than a plain cabinet, and a controller for a discontinued model is one of the few parts that can be genuinely hard to find. Ask us whether the brand still has service agents in Australia for that model before you commit.
A probe tells the machine what the centre of the food is doing; a timer only tells it how long it has been running. For dense product in deep trays, the difference is real, because the surface can be cold long before the centre is. A probe cycle finishes when the food is ready rather than when the clock runs out.
Plenty of kitchens run timed cycles successfully with shallow trays and consistent portion sizes. If you are chilling whole joints, stocks or deep bakes, look for a unit with a working probe and check the probe is included, because it is a part that goes missing when a machine is decommissioned.
Somewhere it can shed a lot of heat quickly, and somewhere the hot trays do not have far to travel. A blast chiller works hardest in the first minutes of a cycle, so the condenser needs the clearance the maker asks for and air that is not already hot from the cook line. The product page states the clearance.
If the room cannot give the machine air, a remote condenser arrangement is the alternative, and that is a conversation to have before you buy rather than after. The same logic applies to anything else going in that corner — keep it away from commercial ovens and fryers where you can.
Often, and it is a sensible route for a machine this specialised. Silverchef Rent-Try-Buy lets you rent the unit instead of paying for it outright, so the cash stays in production and the payments are an operating expense while you find out how much of your menu actually gets cooked ahead.
Kitchens routinely over-buy or under-buy on their first blast chiller, because capacity is hard to judge before the production schedule settles. Renting makes that decision reversible. Ask us which units in stock can be put on a rental.
