A manual pasta machine rolls dough down to a sheet and cuts it into fettuccine, tagliatelle or lasagne, so a kitchen can make its own fresh pasta each day instead of buying it in. Commercial manual pasta machines are what most kitchens making fresh pasta actually use, because the volumes involved rarely justify a motorised sheeter.
A manual pasta making machine gives the cook direct feel for the dough, which matters more with pasta than with most things: you can hear and feel when a sheet is being over-worked. It clamps or bolts to the bench and you turn the crank, working the dough down through decreasing roller settings.
They sit in the manual kitchen appliance range, with powered options in our pasta machine range and cooking covered by benchtop pasta cookers and gas pasta cookers.

Enough for a service in most restaurants, and the limit is the person cranking rather than the machine. A cook who has done it before will sheet and cut a day's pasta for a mid-sized dining room in a prep session.
The practical constraint is the resting and the drying space, not the rolling. Plan the bench and the rack before you worry about the machine's output.
A clamp suits a kitchen where the machine comes out for a prep session and goes away again, and it needs a bench with an accessible lip to grip. Bolting down suits a dedicated pasta bench where the machine lives permanently and nobody wants it walking.
Check the bench before you choose. Plenty of modern joinery counters have no lip a clamp can use, which forces the decision. A stainless steel bench with an exposed edge keeps both options open.
Fettuccine and tagliatelle cover most menus, and a plain sheet setting covers lasagne, ravioli and pappardelle cut by hand. Anything beyond that is menu-specific.
Confirm the attachments are available for the model you buy and that they mount to its roller shaft, because attachments are not interchangeable between brands or always between models in one range. The compatible accessories are listed on each product page.
It handles the egg and semolina doughs most fresh pasta menus use. Very stiff doughs and large batches are hard work by hand and are where a powered sheeter earns its keep, and gluten-free doughs behave differently again.
Dough temperature matters more than people expect: cold dough from the fridge fights the rollers. Let it come up before sheeting, and keep the resting dough covered in a container rather than drying on the bench.
Dry, with a brush and a dry cloth, and never in water. Water on the rollers and in the gearing is what destroys these machines, and most manufacturers are explicit about it.
Let any dough residue dry fully and brush it off, keep the gearing lightly lubricated to the manufacturer's instruction, and store it covered so it does not collect flour dust and grease. Treat it differently from the rest of your kitchen utensils.
Onto a floured tray or a drying rack immediately, in a single layer, with space for air. Stacked fresh sheets fuse, and that is the most common way a prep session is wasted.
Baking trays with a semolina dusting work, and cut pasta goes into gastronorm containers for refrigeration once it is dry to the touch. Portion it as it goes in, not when it comes out.
When one person is spending more than a prep session a day on rolling, or when a second site means the same job is being duplicated. At that point the labour is the cost, not the equipment.
A powered sheeter or extruder also changes the dough you can work with, which opens up shapes a manual machine cannot make. Our pasta machine range covers the step up, and a planetary mixer handles the dough once batches get large.
