A 2 door bench freezer keeps frozen portions, ice and pre-prepped items under the work surface, so the line pulls stock out without anyone walking to a freezer across the kitchen. It is the most common size in the format.
Also listed as a 2 door under bench freezer, it fits below a standard bench height with a stainless top you can work on. Smaller kitchens use 1 door bench freezers; longer lines use 3 door bench freezers.

Drawers put stock in reach without bending into the cabinet; doors hold taller items and bulk. Drawers take the place of a door rather than adding to the cabinet, so the unit is the same size either way, and many kitchens run one of each along the line.
See the format in commercial under counter freezers.
Most are built to fit below a standard bench, but check height, depth and ventilation clearance before the joinery is made.
Chilled units at the same height are in commercial bench fridges.
Automatic defrost saves labour and keeps performance steady, which matters in a busy kitchen. Manual defrost units cost less and suit freezers that are opened rarely.
Either way, ice build-up means a seal or airflow problem rather than a defrost problem.
Look for ice building around the door, condensation on the frame, or a seal that no longer grips paper closed in the door. A failing seal makes the compressor run constantly and frosts the cabinet.
Seals are replaceable on most cabinets, and it is the cheapest repair there is.
Frozen storage requirements come from your local food authority. Each model lists its operating range, and the cabinet has to hold it with the door opening through service.
Check daily with fridge and freezer thermometers.
