A waiter's friend is the folding corkscrew that does three jobs in one hand: cuts the foil, pulls the cork and lifts a crown seal. Commercial wine openers of this pattern stay standard because they fit in an apron pocket and they work at the table without a stand or a bench.
The detail that matters is the hinge. A double-hinged waiter's friend has a second step on the lever, so a long cork comes out in two short pulls instead of one that levers the cork sideways. Add a sharp foil cutter and a worm with real length and you have the only opener a floor needs.
Openers sit in the waiter accessories range beside commercial check pads and waiter aprons, and are used around wine glasses, wine fridges and the bar accessories range.
Buying openers for a whole floor team? The pack prices are in the price guide, so you can cost one per person plus the spares that go home in aprons.
Double, for anything other than occasional use. The second hinge resets the fulcrum partway through the pull, which keeps the cork coming straight up instead of levering against the lip of the bottle.
A single hinge works on short corks and struggles on long ones, which is when corks break. The difference costs very little per unit.
Length, pitch and a narrow, polished spiral with an open centre you can see through. A worm that is too short will not reach the base of a long cork; a thick one tears the cork rather than gripping it.
Teflon-coated worms turn with less effort. Avoid anything that looks like a solid screw rather than a spiral.
Their own. An opener shared across a station means someone is always waiting for it, and waiting with a table watching is the whole problem.
Issue one per person and hold spares, because they go home in aprons. See waiter clothing for the pockets they live in.
Keep it out of the dishwasher and out of the same pocket as keys and coins. The blade is small and thin, and most bluntness is wear from rattling against metal rather than from cutting foil.
Wipe it dry after a wet shift. A blunt cutter tears the foil, which looks careless at the table.
Wiped, not washed. A hot wash cycle stiffens the hinge, rusts the spring and loosens the handle scales, and that turns a working opener into a two-handed job.
Wipe the worm and the blade after service and dry the hinge. Keep them away from the commercial dishwasher regardless of what the rest of the service equipment does.
The crown-seal lifter on the opener covers beer, so most floors need nothing else. A separate bar blade is worth it where beer volume is high and the corkscrew is not.
For sparkling, no tool is needed beyond a cloth. See bar accessories and beer glasses.
Years, if it is not washed and not used as a pry bar. The parts that fail are the hinge and the blade, and both fail from misuse rather than from opening wine.
Replace rather than repair — they are inexpensive and a loose opener is slow at the table. Keep spares with the rest of the waiter accessories stock.
