Egg rings are what make a breakfast service repeatable. A fried egg cooked free on a plate is a different size every time; an egg cooked in a ring fits the muffin, fits the burger, and plates the same for every cover.
The range covers three related things. Egg rings for frying on a plate or griddle. Egg poachers — pods and inserts that hold a poached egg in shape. And egg cutters and shapers used to trim or form eggs, crumpets and rosti to a set size.
The decisions are the diameter, the material and whether there is a handle. Diameter has to match what the egg is going onto, which is usually a bun or a muffin rather than a plate. See commercial gas griddles and benchtop gas griddles for where the rings live, and pastry cutters and rollers for the shaping end of the same idea.
Ring and cutter diameters are listed in the price guide, so you can measure the bun you buy and order to it.
The same as the bread it is going onto, slightly under rather than over. An egg wider than the muffin overhangs and gets cut off; an egg much smaller looks mean.
Diameters are on each product page. Measure the bun you actually buy rather than assuming a standard — see commercial baking trays for the tray it is all assembled on.
Stainless gives a crisp edge and lasts, and 304 stainless steel is the food-safety grade used in Australian kitchens. Non-stick releases more easily and the coating wears. Silicone releases best of the three and will not give a crisp edge.
On a busy griddle, stainless with a light oil film is the usual choice. See commercial stainless steel kitchen accessories.
On a griddle, yes, because the ring has to be lifted off a hot plate while the egg is still soft. A ring without a handle has to be moved with tongs or a turner, which is slower and riskier.
Handle-less rings suit a pan or an oven tray where there is time. Keep commercial kitchen tongs and a spatula at the station either way.
Oil the inside of the ring, not just the plate, and let the ring come up to temperature with the plate rather than putting a cold ring onto a hot surface.
Scrape and wipe the rings during service, not just at the end. Grill and griddle cleaners handle the build-up.
Not quite. A pod gives a consistent shape and a clean white, which is what a service needs, and loses the ragged free-poached look. For volume and consistency it is the right trade.
The alternative at volume is poaching in batches and holding them in cold water, then reheating to order. See commercial sous vides for the controlled-temperature route.
Solid stainless rings generally can, and a commercial dishwasher is the easiest way to deal with cooked-on egg. Non-stick and silicone items depend on the product, and the page states it.
Egg protein sets hard, so soak rather than scrape anything coated. Scraping is what takes a non-stick ring out of service.
Enough to fill the griddle in one pass, plus spares, because rings come off the plate wet and go straight to the wash. Running short mid-service means cooking eggs free.
They are inexpensive, so over-buy. The rest of what a breakfast line runs on is in commercial kitchen utensils and commercial kitchen tools.
