A heated shelf holds food at serving temperature between the kitchen and the customer. A heated display shelf at the pass stops plates going out lukewarm when service backs up, and a heated shelf under a counter keeps pastries and pies ready to sell.

They sit alongside the rest of your hot holding. Hot food displays merchandise to customers, bain marie displays hold wet or dry wells of food, and a commercial heated shelf holds what is already plated.

These are the top FAQs for Heated Shelves

Where does a heated shelf belong?

At the pass, under the heat lamps, or behind the counter beside the till. The point is holding, not cooking, so it goes where food waits rather than where it is prepared.

For food on show to customers, a counter top hot food display does the same holding job inside a glass cabinet.

Heated shelf or heat lamp?

A shelf heats from below and holds a whole run of plates. A lamp heats from above, in single lamps for one plating point up to strip heaters that cover a whole line. Most passes use both: lamps over the plating area, shelves for plates waiting to be run.

Where food needs to stay moist rather than just warm, a hot bain marie display holds it in wells instead.

What surface should I look for?

Stainless steel cleans back easily and takes the knocks of service, which is why most heated shelving is built from it. Glass-topped units look better front of house but scratch more easily.

Whatever the surface, check the controls. A shelf that only runs flat out dries plated food out; one with an adjustable thermostat can be held lower for delicate items. The rest of our stainless steel equipment range matches the same finish.

How much heated shelving do I need?

Count plates waiting at your busiest fifteen minutes, not your daily covers. Under-sizing means food sitting off-heat while the shelf is full.

If you are fitting out the whole pass, look at freestanding hot food displays for volume and commercial heat lamps for the plating point, and keep chilled garnish within reach in commercial under counter fridges.

What temperature should a heated shelf hold?

Hot holding requirements come from your local food authority. A shelf should hold plated food at that temperature without continuing to cook it, which is why an adjustable thermostat matters.

Check with food thermometers.

Can a heated shelf be built into a counter?

Drop-in models are made for it; benchtop models are not. Check which you are buying before the joinery is made.

Built-in hot wells are in heated wells.
