What does a wash-up station need?

A soiled bench with a rinse jet, the machine, a clean bench to rack out, racks, chemicals and a scrap bin. Hand washing is separate and usually required.

How many racks should I buy?

Enough to keep loading while a cycle runs, plus racks draining. Two or three per machine is a common starting point.

Do I need a stand?

If the machine sits on the floor, yes. Loading at floor level is slow and causes breakages.

What chemicals are needed?

Detergent and rinse aid dosed by the machine, plus descaler on a schedule. Chemicals must suit the machine's dosing system.

What about glassware?

Glasses need compartment racks and often a separate machine, because plate machines run hotter cycles than glassware likes.

How do I cut rewashing?

Pre-rinse properly, do not overload racks, and keep the machine descaled. Most rewashing is loading or scale rather than the machine.

What drains and plumbing are involved?

The machine needs supply, drain and sometimes a drain pump if raised. Get the requirement before the plumber books in.
