Vogue Stainless Steel Spaghetti Basket 180mm - CS735

A commercial frying basket holds the chips, the crumbed product or the calamari down in the oil and lifts the lot out together when it is done. Commercial frying baskets are a consumable rather than a fixture: they live in hot oil, get knocked against the fryer rim all shift, and pick up carbon that eventually will not clean off.
The fit is the thing that matters most at order time. Baskets are made for a specific fryer model and a specific tank size — a basket that is slightly too wide will not clear the element, and one that is too deep sits on the bottom and scorches.
After fit, compare the mesh and the handle. Finer mesh holds smaller product and sheds less of it into the oil, which keeps the oil usable for longer. The handle is what fails first, so a welded joint is worth more than a riveted one.
Baskets pair with the gas deep fryers, electric deep fryers and benchtop deep fryers they are fitted to. Oil management sits with cooking oil filters and fryer filter machines.
Holding spares for a bank of fryers? The price guide shows which baskets we carry, so you can work out how many of each to keep before one goes out of shape mid-service.
Match it to the fryer make and model rather than measuring the old one, because a worn basket has usually gone out of shape. The fryer product page or its specifications state the basket it takes.
If the fryer runs twin baskets, buy them as a pair. Mixing a new basket with a distorted old one in the same tank makes the two sides cook differently.
Either the mesh is too coarse for what you are frying, or it has stretched. Small items — chips cut thin, crumbs, calamari rings — need a finer mesh than a general-purpose basket has.
Debris in the oil is the real cost. It burns, darkens the oil and shortens its life, so a finer basket for small product pays for itself in oil.
When the mesh has carbon that will not come off, when the shape has gone so it fouls the fryer, or when the handle has loosened. None of those are repairable in a kitchen.
Hold spares for the fryer you use hardest. A kitchen running one basket short starts overloading the remaining one, and an overloaded basket drops the oil temperature.
It is the most common reason fried food comes out pale and oily. Too much cold product at once pulls the oil temperature down, and the food absorbs oil instead of sealing.
Two half loads back to back are faster than one overloaded drop that has to go back in. Size the basket to the busiest single order instead.
Soaked in a degreaser, then brushed, because baked-on carbon does not come off in a normal wash cycle. A basket that goes through the dishwasher with carbon on it comes out with carbon on it.
Use a proper fryer cleaner from the cooking equipment cleaners range rather than general detergent, and check the product page before putting one in the commercial dishwasher.
For allergens, yes, and that is not negotiable. Anything crumbed with a gluten coating cannot share a basket with a gluten-free item, and in practice it usually cannot share the oil either.
Mark the baskets so there is no judgement call at the fryer. Colour-coded handles work the same way colour-coded chopping boards do.
Somewhere to drain and hold — a rack, a chip warmer and tongs or a scoop that is not the basket itself. Shaking salt into a basket over the oil is how salt gets into the oil.
Keep kitchen tongs and a dedicated drain tray at the station. The basket is for frying, not for holding or serving.
