A hot food display bain marie holds cooked food at serving temperature behind glass, so customers can see what is ready while staff serve from the pans.

A hot display bain marie suits bakeries, takeaways, canteens and food courts. A heated bain marie food display runs wet or dry, depending on what you hold. Our hot bain marie displays include small benchtop units for a short counter up to large freestanding displays for a food court line, so you can buy the size that suits your business at its current size, then size up as your business grows. These are the top FAQs for Hot Food Display Bain Maries

Wet or dry heat for a hot bain marie?

Wet holds water under the pans for gentle, even heat, which suits sauces, curries and stews. Dry heats the pan directly, which is simpler and better for food that should not steam.

Built-in wells are in heated wells.

What temperature does hot holding require?

Requirements come from your local food authority. The unit has to hold them during service with the glass open and staff serving, not just when full.

Check with food thermometers.

How do I stop food drying out?

Use lids where possible, keep wet wells topped up, and do not hold food longer than your plan allows.

Plated food holds better under commercial heat lamps.

Can I cook in a bain marie?

No. It holds food at temperature; it does not bring it up to temperature safely. Cook first, then hold.

Cooking equipment is in commercial cooking equipment.

Benchtop or freestanding?

Benchtop suits a short counter; freestanding suits a food court or canteen line.

See freestanding hot food displays.

What maintenance does it need?

Daily cleaning and descaling on wet units. Scale shortens element life in hard water areas.
