How Does a Bain-Marie Work?
Bain-maries are designed with two parts, the outer vat or bath where the water is kept: and the inner (usually GN Pans) that ensure the cooked food is kept warm.
The inner pot sits above the outer pot. The water in the outer pot transfers heat energy from its source (gas or electric heating element) to the inner pot.
