How do I clean and maintain stainless steel kitchen shelves?

A lot of our shelving goes in cool rooms and walk-in freezers, so the materials do not rust or grow mould. Most of it is stainless steel; some is poly-coated steel. Some units have an antibacterial coating on the shelves, which makes them easier to keep clean.

On some units the shelves come out, and if they fit they can go through the dishwasher. Otherwise wash them by hand in hot soapy water, rinse them properly and dry them before they go back on.

In between, wipe the shelves down and clean up spills as they happen so nothing drips onto the stock below. Check the shelves are still sitting square on the frame while you are there. Go easy on gritty cleaners, because they scratch the surface and the finish goes from there.
